Abstract
Phosphatidylcholines (PCs) in which different fatty acyl chains are esterified to the sn1- and sn2-positions of the glycerol moiety have been studied as initial models of more complex, naturally occurring mixed-chain glycerolipids. Such studies have identified and characterized a unique class of PCs which form so-called mixed interdigitated (L(beta i)) gel phases. The interesting features of these PCs are that the effective length of one fatty acyl chain is approximately twice that of the other and in the L(beta i) phase their long chains are fully interdigitated across the lipid bilayer and the methyl termini of the short chains are opposed at the bilayer core. This paper presents the results of a study in which aspects of interfacial hydration and hydrocarbon chain packing interactions in the L(beta i) gel phases are probed by an examination of the infrared spectra of specifically chain perdeuterated and 13C equals O-labeled lipids.
